Vicki's Wild Rice Salad
Ingredients:
- 1 1⁄2 cups cooked white rice
- 1 cup of cooked wild rice
- 1/3 cup currents
- 1/3 cup dried apricots, soaked in water 15 mins, then drain & chop
- 80g slithered almonds
- 1⁄2 cup vegetable oil
- 1⁄2 tsp cumin seeds
- 1 1⁄2 tsps coriander
- Approx 3⁄4 cup spring onions green leaves only
- Squeeze of Lemon juice
- Squeeze of fresh orange juice and grated zest
- Black cracked pepper
Method:
Mix all ingredients together in a bowl, cover and refridgerate overnight if possible.
Add more orange juice if required to taste.
You can add more apricots and almonds if you wish.
